I love to cook stir-fry in the summer! It's quick, easy, and full of veggies. You are going to love this Kielbasa Stir-fry recipe.
All you need is:
- 8 oz of turkey kielbasa (or your favorite large link sausage), chopped
- half of a red bell pepper, chopped
- 1 onion, chopped
- 1 can of stewed tomatoes (flavored with onions & peppers)
- 2 cups of chopped carrots
- cooked rice
In a large skillet lightly brown your bite-sized sausage. Remove from the pan. The sausage should have left behind some grease. If not add 1 tablespoon of vegetable oil to the pan.
Saute your carrots in the large pan until lightly brown. When the carrots are about half-way cooked, add the red bell peppers. When the peppers are about half-way cooked add the onions.
When the onions are almost cooked, add the stewed tomatoes and stir. Allow the liquid to cook off until you have a thick sauce.
Serve over rice or your favorite pasta.
See? Super easy and quick. Kielbasa stirfry would also be delicious with broccoli, summer squash, or any other veggie you have on hand.

Oh, delicious looking recipe and we have a bunch of turkey kielbasa that I picked up on sale last month. Going to have to try this!
My favorite stir fry is brown rice, whatever leftover meat's in the fridge, Swiss chard or bok choy from the garden, shredded carrots and diced celery, a couple of scrambled eggs, Hoisin sauce, soy sauce and a tiny splash of fish sauce. It's my go-to meal when I need to clean out the fridge or garden.
Katie B., sounds yummy!! This recipe could easily be used with chicken or even vegetarian. Summer squash/zucchini, broccoli, just about any veggie would be good!
