Menu Plan Monday :: July 9, 2012

We are in full summer mode! That means lots of salad, veggies, grilling, and the occasional burger or hot dogs.

Here's what we're eating this week:

The original recipe is kind of a stir-fry. I adapt it when my chicken is already cooked (I grilled a bunch of chicken and have it in the fridge ready to eat with whatever). I stir-fry the veggies in a little bit of oil, the add the vinegar and honey mixture at the end along with the chicken chopped into bite sized pieces. It's really quick to cook, low calorie and taste delicious. Add a side of rice or just eat the chicken and veggies.
